Raw Energy Bites

No-Bake Energy Bites

These no-bake energy bites have been a family favorite for YEARS. We all love them. They are easy to make and have almost limitless opportunity for variation! Add in cinnamon, raisin, cranberries, different kinds of nuts, coconut. Have fun with your kids in the kitchen!

Ingredients:

  • 1 cup oatmeal
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup raw, local honey
  • 1/2 cup ground flaxseed
  • 1/2 cup carob chips or dark chocolate chips
  • 1 tsp vanilla

(You could substitute dried cranberries or raisins for the chocolate chips. You could also add coconut flakes. And, you could do a pinch of cinnamon, too. In other words, get creative!)

Directions:

Mix everything in a medium bowl.  Chill for 30 minutes.  Roll into balls.  

Enjoy!  

{You can always store leftover balls in fridge for up to 1 week. So this makes a GREAT prep-ahead snack for your meal plan!}
